Kombu washed up on the beach...I pay all sorts of $$$ for this stuff back home...

Can make a killer Dashi dressing or my famous seaweed wrapped king salmon with this stuff!!!

Wild sage in the Bush, this was on Xaxaba Island, Okavango Delta in Botswana.

It smells so good but don't eat it because you can get sick!

Being a Chef, the Chef from Khwai River Camp made me a burger. Normally I hate burgers made in other areas of the world because they add the wrong spices and meat. But this was a Impala Burger and was really good!!!

Score Avocado, scoop out flesh into the bowl...

Mix gently you want the outer green part of the Avocado to become creamy and keep the integrity of the yellow part to stay chunky.

I ate a few and washed it down with some local Mezcal.....BOOM! these things rule!

BBQ skills with a Webber..,

I always tell people I cook mostly with a small coal grill (yeah I have a Klose Pit, Trager smoker and Lynx grill).

This batch is being perfected ... Coal, wood and vinegar mop....
I thing 6- 8 hours for the shoulder, 5 for the ribs...but again still playin' around.
